This cheesecake is FANTASTIC! I made sure all my ingredients were room temperature, so they combined without any problems. I was pretty nervous about taking it out at the right time, but after letting it in a few extra minutes to make up for the low initial temperature, I removed it from the oven when there was still a pretty big jiggle and it was perfect!
